Anyone for lemon cake?

Here's an idea for you: A lemon cake with two toppings- chocolate and Walnut. Sound tasty? Below is the recipe I used but, like always, you can modify it to whatever your preference may be.

Ingredients

(for the cake) 2 eggs, 3oz self-raising flour, 3oz caster sugar, 3oz butter, 3/4 level tsp baking powder, grated zest of 1/2 lemon.

(for the lemon icing): 100g caster sugar, juice of 1 lemon. Then some milk chocolate/walnuts to grate on top.

Method
  • Preheat oven to 180 degrees then beat together the eggs, flour, caster sugar, butter, baking powder 
  • Add the lemon zest and mix it in so the sponge will be lovely and lemony
  • Bake in the oven for about 35 minutes until golden brown and springy to the touch
  • For the topping, simply mix together the sugar and lemon juice and evenly spread onto the cake.
  • I then cut the cake in half and grated chocolate on one and walnuts on the other before slicing each one one into three segments and serving with a cup of tea. Yum.
