Ingredients
(for the cake) 2 eggs, 3oz self-raising flour, 3oz caster sugar, 3oz butter, 3/4 level tsp baking powder, grated zest of 1/2 lemon.
(for the lemon icing): 100g caster sugar, juice of 1 lemon. Then some milk chocolate/walnuts to grate on top.
Method
- Preheat oven to 180 degrees then beat together the eggs, flour, caster sugar, butter, baking powder
- Add the lemon zest and mix it in so the sponge will be lovely and lemony
- Bake in the oven for about 35 minutes until golden brown and springy to the touch
- For the topping, simply mix together the sugar and lemon juice and evenly spread onto the cake.
- I then cut the cake in half and grated chocolate on one and walnuts on the other before slicing each one one into three segments and serving with a cup of tea. Yum.
Looks so yummy...I've been in such a baking mood lately, so I guess I should give this a try :)
